Zucchini Boats: the recipe for a simple and fresh dish
Ingredients:
5 zucchini
1 egg
100 g of tuna
50 g of parmesan
Salt and pepper
2 tablespoons of breadcrumbs
1 clove of garlic
2 parsley stalks
Preparation:
- Remove the ends, and cut the zucchini in half lengthwise.
- Use a spoon to remove the pulp, emptying them completely.
- Arrange the zucchini in a baking dish and season with salt.
- In a bowl, add the zucchini pulp, tuna, parmesan, egg, chopped garlic and parsley, salt and pepper.
- Mix all the ingredients well.
- Finally, add the breadcrumbs.
- Use the mixture obtained to stuff the courgettes, then sprinkle with more breadcrumbs.
- Bake in a static oven at 200° for 40 minutes.
