Zucchini rolls are an easy and tasty baked appetizer , to prepare both for an impromptu dinner and for a quick aperitif with friends. They are scenic spiral-shaped morsels, held together by a toothpick, with a stringy cheese heart and a very crunchy external breading . We recommend using long zucchini , and slicing them with a mandolin, to obtain thin but consistent slices . By cooking them briefly in the oven alone, they will soften and roll up very easily, without breaking.
The same recipe can also be made with fried courgettes . As for the internal filling , you can opt for a classic filling of ham and cheese , or experiment with what you like best. The preparation of courgette rolls is so simple that it can be adapted to everyone’s tastes and diets: you can choose a completely vegetarian filling , or even vegan . An even lighter alternative is courgette rolls with tuna , made with roasted courgettes.

How to make baked zucchini rolls
Step 1
Wash the courgettes well and dry them. Using a mandolin, slice them lengthwise1.

The slices should be about 4-5 mm thick.2.

Dip each slice of courgette in extra virgin olive oil3.

Bread the courgettes on both sides, using your hands to help the breading stick better.5.

Arrange the slices on a baking tray lined with baking paper and cook for 20 minutes at 180°C6.
