Ingredients

1 kilo of tortilla dough
1 teaspoon of salt
1 cup of water
3 tablespoons of lard
200 grams of aged cheese
1 avocado
½ onion, sliced
¼ cup of cream
Red sauce

3 tomatoes
4 serrano chiles
½ cup of chicken broth
1 teaspoon of salt
¼ kilo of lard
Green sauce

5 green tomatoes
4 serrano chiles
½ cup of chicken broth
1 teaspoon of salt
¼ kilo of lard

PREPARATION

COMBINE the tortilla dough with the salt, water and lard.
FORM slightly thick discs and cook them on the griddle.
PINCH the edge of each disc just after removing them from the griddle.
ROAST the tomatoes and peel them.
BLEND the tomatoes, chicken broth, serrano chile and salt.
FRY the sauce in a pot with the lard.
REPEAT the same steps as for the red sauce to make the green sauce.
SPREAD the sauce over the cooked dough and add the aged cheese, onion, avocado and cream.
