Swiss Enchiladas
Ingredients
10 green tomatoes
1 piece of onion
2 serrano chiles
2 garlic cloves
1/4 cup water
1 tablespoon chicken broth
1 tablespoon oil
Corn tortillas
Shredded chicken breast
Manchego cheese
Chopped fresh cilantro
Steps
1-Boil the tomatoes, onion, cilantro, chiles and garlic for 3 minutes. Blend with 1/4 cup water and chicken broth.
2-Heat a tablespoon of oil and cook the sauce over medium heat for 5 minutes.
3-For the enchiladas: heat the remaining 2 tablespoons of oil in a pan and fry the tortillas. Drain on absorbent paper.
4-Fill the tortillas with the chicken and roll them up.
5-Serve the enchiladas, cover with the sauce and add cheese. Heat in microwave until gratinated, decorate with cilantro leaves #enchiladas #greenenchiladas
