The implementation is simple and does not contain complicated steps. You can prepare this dish whenever you want and for any occasion.

To prepare this recipe made up of several layers we must use as ingredients :
- 300 g of porcini or champignon mushrooms
- 100 g of grated parmesan
- 150 g of scamorza
- Pepper just enough
- Parsley just enough
- 500 g of potatoes
- 180 g of stale bread
- 2 cloves of garlic
- Salt just enough
Various preparations.
Let’s start by cleaning the mushrooms well and then wash them quickly under running water. Dab them with absorbent paper and then cut them into slices.
Then we take the potatoes, remove the peel and immerse them in a bowl containing cold water.
At this point, put a frying pan on the stove and brown the oil together with 1 clove of grated garlic, salt, pepper and parsley. After a few moments, add the mushrooms and cook for 10 minutes, stirring occasionally.
In the meantime, take the potatoes, cut them into slices and leave them still immersed in the water.
Then we soften the stale bread in water. Then squeeze it between your hands to remove excess water and transfer the result into a clean bowl. Add the grated cheese, pepper, parsley and minced garlic clove to the bowl.
We mix well.
We then take a pan to a work table and wet the bottom of the pan with the mushroom sauce.
Drain the potatoes in a bowl and salt them and then season them lightly with the sauce.
Then on the base of the pan we go to create a bed of potatoes. On top, add the mushrooms and the previously diced scamorza cheese. Add the bread mixture and cover everything with another layer of potatoes. We repeat the sequence just described until the ingredients are used up.
On the last layer obtained, add the grated cheese and then cover everything with aluminum foil.
Finally, we take the pan into a hot oven and let it cook for 35 to 40 minutes at a temperature of 180 degrees.
Then remove the aluminum foil and cook for another 10 minutes to obtain a golden surface.
The potato, mushroom and scamorza flan is ready. We eat hot.
