A delicious, simple and economical popular egg kofta tagine
A delicious, popular, simple and economical egg kofta tagine, to be enjoyed with good homemade bread.
Ingredients
- 500 g of ground beef
- 3 eggs
- 1 onion
- 4 red and juicy tomatoes
- 1 small bunch of parsley
- 1 teaspoon of ginger
- 1 teaspoon of pepper
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- 1 glass of olive oil
- Salt
Preparation
- In a tagine, heat a little oil and brown half of the chopped onion. Add the chopped tomatoes, half of the chopped parsley, ginger, pepper, cumin and paprika. Cook for 15 minutes at a low simmer.
- In a salad bowl, knead the minced meat with the rest of the chopped onion, the cumin and the rest of the chopped parsley. Salt, pepper.
- Add a glass and a half of water to the tagine. Cover and cook for another 15 minutes.
- Take the bowl of meat and lightly wet your hands.
- Shape kofta balls between your hands, the size of a golf ball. Arrange them gradually in the casserole, in the sauce. Do not mix and cook for 10 minutes to set the meatballs.
- When the meat is cooked and the sauce is well reduced, add the eggs and cook for 5 minutes.
- Serve it in a hot tagine dish. You can prepare it in advance to reheat it at the last moment.
