Easy Classic Sponge Cake

Ingredients

  • 4 eggs
  • 125 g of sugar
  • 125 g of flour
  • 1/2 teaspoon baking powder

Preparation

  1. Preheat the oven to 180°C (th 6). Mix the yeast with the flour.
  2. Separate the egg whites from the egg yolks, and beat the egg whites until stiff with a pinch of salt.
  3. When they are very firm, add the sugar and beat again.
  4. Reduce the speed of the mixer and add the 4 yolks all at once, then immediately the flour and the yeast in a drizzle.
  5. Stop the robot very quickly so that the mixture does not have time to settle, pour into the mold, smooth the surface and immediately bake for 20 minutes.
  6. Unmold while lukewarm and wait until the cake has cooled to slice it lengthwise and garnish it.
