Blender Carrot Cake
Blender Carrot Cake is a delicious and easy-to-make dessert that combines simple ingredients to create a moist, slightly sweet pastry.
Ingredients
- Medium carrots: 2 (250g)
- Eggs: 4
- Vegetable oil: 150 ml (2/3 cup)
- Sugar: 200 g (1 cup)
- Flour: 250 g (2 cups)
- Baking powder: 10 g (2 teaspoons)
Preparation
- Cut the carrots into thick slices.
- Preheat the oven to 180°C/350°F. Add the chopped carrots to a medium mixing bowl, along with the eggs and vegetable oil.
- Use a hand blender to blend the carrots and eggs until smooth.
- Add the sugar and whisk to combine.
- Sift the flour and baking powder.
- Whisk the batter until smooth.
- Pour the dough into a 20×20 cm mold lined with baking paper. Bake for 30-35 minutes.
- Use the overhanging pieces of parchment paper to carefully lift the cake out of the pan.
- Cut into individual portions and sprinkle with powdered sugar before serving.
