Blitz coconut cake with vanilla pudding
Ingredients
For the dough: (1 cup = 250 ml)
1/2 cup melted butter
1 pack of baking powder
2 eggs
1 cup milk
2 cups flour
1 cup powdered sugar
For the topping:
half a cup of sugar
half a cup of desiccated coconut
2 packs of vanilla pudding powder
1 liter of milk

This is how it works: 1. First beat the eggs and sugar until foamy, add melted butter and finally fold in sifted flour with baking powder.
2. Then place the dough on a butter-greased baking tray with high sides and sprinkle with a coconut-sugar mixture.
3. Bake overnight in a preheated oven at 190 °C for about 20 minutes. Don’t let it out of your eye because it shouldn’t get too brown.
4. Cook the vanilla pudding with milk and 1/2 sugar according to the package instructions and add coconut flakes. Stir everything in, then let it cool a little.
Now all you have to do is pour pudding over the cake and let it cool. Sprinkle with coconut flakes.
