Very easy to prepare strawberry mousse cake

Strawberry cake is very simple to prepare and is perfect to prepare for birthdays and special occasions. A light and creamy texture, formed by alternating layers of mousse , sponge cake and fresh strawberries.
It’s a cake with many steps and requires a bit of time and patience, but the steps are kept simple. Moreover, you will see that it is really worth it, it is delicious! You can also revisit it at your leisure by replacing the strawberries with berries.

How to make Sparkling Strawberry Cake!

Ingredients for the sponge cake:

  • 4 eggs
  • 120g sugar
  • 120g flour
  • 1 pinch of salt
strawberry mousse:
  • 340g strawberries
  • 100g sugar
  • 40g water
  • 12g gelatin powder
  • 375 g fresh cream
strawberry jelly:
  • 250g strawberries
  • 40g sugar
  • 10g water
  • 6g powdered gelatin
garnish and decoration:
  • 12/13 small and regular strawberries for decoration on the edge
  • 200 g strawberries, cut into small cubes for internal garnish
  • 2 strawberries for decoration

Preparation :

  1. Preheat the oven to 180°C.
  2. In a bowl, whisk the eggs and sugar until the mixture whitens and doubles in volume.
  3. Add the sifted flour and the pinch of salt, mixing gently.
  4. Pour the batter into a buttered and floured cake pan.
  5. Bake for 20 to 25 minutes.
  6. Meanwhile, prepare the strawberry mousse. Mix the strawberries with the sugar and water, then heat the puree obtained in a saucepan.
  7. Add the gelatin powder and mix well.
  8. Leave the preparation to cool.
  9. Whip the crème fraîche into whipped cream.
  10. Gently fold the cooled strawberry purée into the whipped cream.
  11. Prepare the strawberry jelly by blending the strawberries with the sugar and water, then adding the powdered gelatin.
  12. Cut the cooled sponge cake in half.
  13. Spread a layer of strawberry mousse on the first half of the sponge cake.
  14. Add a layer of strawberries cut into small cubes.
  15. Cover with the second half of the sponge cake.
  16. Spread the strawberry jelly on top of the cake.
  17. Place the cake in the refrigerator for at least 2 hours.
  18. When ready to serve, decorate the cake with whole strawberries.
