Ingredients :

Pastry

  • 250g flour
  • 60g icing sugar
  • The zest of a lemon
  • 1 egg yolk
  • 150g soft butter
  • A packet of vanilla sugar

Apple cake

  • 2 apples
  • 250 g PHILADELPHIA spreadable cheese
  • 50g flour
  • 30g icing sugar
  • 3 egg yolks
  • 100g sugar
  • 150g heavy cream
  • 4 egg whites
  • 2 g de sel
  • A packet of vanilla sugar

Preparation :

  1. Start by preparing the shortcrust pastry: in a bowl, mix the flour, grated lemon zest, egg yolk and soft butter until a sandy mixture forms.
  2. Pour the mixture into a mold covered with parchment paper and compact it well with a spatula and your fingers.
  3. Cut the apples into small pieces without peeling them and place them in the mould.
  4. Next, prepare the dough for the cake: in a bowl, mix the flour, icing sugar, 3 egg yolks, heavy cream, cream cheese and vanilla sugar until a homogeneous mixture and no lumps form.
  5. In another bowl, whip the egg whites until stiff and gently fold them into the previous mixture.
  6. Pour this mixture over the apples in the mold and bake at 180°C (Th 6) for 40 minutes.
