Potato cake in a pan: the recipe for a rustic and stringy dish

Pan-fried potato cake is a delicious and tasty second course that the whole family will love. It can be prepared in just a few minutes and is an exceptional fridge emptyer : we filled it with cooked ham and mozzarella, but you can vary the cured meats and cheeses according to your tastes or what you have available at home. For an impeccable final result, use red potatoes and, once finely grated, take care to squeeze them well, so that they lose most of their vegetation water. The only difficulty with this cake is when you have to turn it upside down but, if you have a double omelet pan available, it will be child’s play. You can also prepare it invegetarian version , eliminating the ham. Find out how to do it by following our simple recipe step by step.

How to make pan-fried potato cake

Step 1

Peel the potatoes, grate them with a grater with large holes1and then season them with a pinch of salt.

Step 2

Squeeze them well, to eliminate as much vegetation water as possible2and then dry them carefully.

Step 3

Incorporate the flour3and add, to taste, a pinch of minced rosemary.

Step 4

Heat a drizzle of oil in a non-stick pan, then spread half the potato mixture on the bottom4.

Step 5

Stuffed with ham and mozzarella, cut into slices5.

Step 6

Cover with the remaining potato mixture and compact well6. Cook over high heat for 6-7 minutes, then lower the heat, close the lid and continue cooking for another 15 minutes.

Step 7

At this point turn the cake upside down, helping you with a lid7, raise the heat and cook for another 7-8 minutes.

Step 8

Transfer the potato cake to a serving dish, add salt and pepper, flavor with a little rosemary and serve piping hot and stringy8.

Advice

If you want to get a more omelette-like end result, you can also add 1-2 eggs to the potato mixture.

For a gluten-free version , you can replace the 00 flour with rice or chickpea flour. If you like, you can also add a pinch of spices, such as turmeric, sweet paprika or curry.

You can replace the mozzarella for pizza with fresh fiordilatte : in this case, cut it into slices and let them drain in a colander for at least an hour. The cheese must be dry.
