Ingredients

  • 4 cloves of garlic
  • 1 tablespoon dried rosemary
  • 1 tablespoon dehydrated parsley
  • 400 g of meat
  • 1 medium onion
  • 2 ripe tomatoes
  • 3 cloves of garlic, crushed
  • 3 teaspoons of salt
  • 1 pinch of black pepper
  • 1 teaspoon cumin
  • 1 teaspoon chimichurri
  • 1 teaspoon dried herbs
  • 2 sprigs of fresh rosemary
  • 2 tablespoons unsalted butter

Preparation

  1. In a large pot of boiling water, add 4 cloves of garlic, 1 tablespoon of dried rosemary and 1 tablespoon of dried parsley.
  2. We add a cut of meat of approximately 400 g and let it cook for one minute. Then, we remove it from the pot, dry it well with paper towels and place it in a large refractory.
  3. We repeat this process with another cut of meat and set it aside.
  4. We cut a medium onion into halves, then into strips and finally into cubes.
  5. We cut two ripe tomatoes into halves, then into strips and finally into cubes.
  6. In a medium bowl, add the onion, 3 crushed garlic cloves and the tomatoes. Season with 3 teaspoons of salt, a pinch of black pepper, 1 teaspoon of cumin, 1 teaspoon of chimichurri and 1 teaspoon of dried herbs. We mix everything very well.
  7. We add this mixture to the refractory dish with the meat and mix well to integrate the flavors.
  8. We cover the refractory with plastic wrap and put it in the refrigerator, letting it marinate for an hour.
  9. After this time has passed, we transfer the meat to wax paper along with aluminum foil, add 2 branches of fresh rosemary and 2 tablespoons of unsalted butter. We wrap well.
  10. We place the wrapped meat on a baking tray and put it in the oven preheated to 180 °C, letting it cook for 40 minutes (the time may vary depending on the power of your oven).
  11. Once ready, we remove the meat from the oven, let it rest for a few minutes and it’s ready to enjoy!
