Fried Mojarras

Ingredients

24 cloves of garlic, cleaned
1 teaspoon of coarse salt
Salt and pepper
4 mojarras
Flour

To accompany

Corn tortillas
1/2 lettuce, chopped
2 tomatoes, sliced
1 red onion, cut into rings
1 avocado, cut into slices
Lemons, cut in half
2 cups of white/red rice
Preparation

  1. RINSE the mojarras, drain and make 4 diagonal incisions on each side of the fish so that the flavors of the mojo enter and marinate the meat.
  2. DRY the fish with a clean kitchen towel. Grind the garlic with coarse salt and pepper in a mortar or pestle; set aside.
  3. SEASON with salt and pepper; inside, outside and in the incisions. Spread the garlic mojo all over the fish, just as you seasoned it with salt and pepper.
  4. SPRINKLE lightly with flour on both sides.
  5. FRY the fish in plenty of hot oil for 7 to 10 minutes on each side. Remove excess oil.
  6. SERVE and accompany with rice and fresh salad
