Shrimp Aguachiles

Ingredients
400gr shrimp
1 cup lemon juice
1 cucumber
½ red onion
1 cup cilantro
1 serrano chili
Salt
Pepper

Preparation

Step 1

To start, it is essential to carefully clean the shrimp, freeing them from germs and thus avoiding poisoning. Then, proceed to make a slit in the center of each one. There should never be two separate parts, but a small cut in the center.

Step 2

Sprinkle a small amount of lemon juice on the shrimp, add salt and pepper. Then, put them in the refrigerator for 15 minutes.

Step 3

Blend the cilantro, half of the chili, pepper, salt and add the remaining lemon juice. Then, it is necessary to strain and pour it into a container.
If you do not want too much spice, it is recommended to remove the seeds from the chili before blending.

Step 4

Cut the cucumber and onion into small pieces or julienne strips and place them in a container.

Step 5

After 15 minutes, take the shrimp out of the refrigerator and add the blended mixture. Then add the ingredients that were previously cut and place them back in the refrigerator.

They should remain cold for at least 1 hour. During this time it is important to turn the shrimp constantly. This will allow the flavors of all the ingredients to blend well.

Finally, once the aguachile is ready, it can be served with some toast and a good beer. This is an ideal dish to enjoy at any time of the day, at special meetings or when you want to prepare a simple but delicious dish.
