Zucchini Boats: the recipe for a simple and fresh dish

Ingredients:
5 zucchini
1 egg
100 g of tuna
50 g of parmesan
Salt and pepper
2 tablespoons of breadcrumbs
1 clove of garlic
2 parsley stalks

Preparation:

  1. Remove the ends, and cut the zucchini in half lengthwise.
  2. Use a spoon to remove the pulp, emptying them completely.
  3. Arrange the zucchini in a baking dish and season with salt.
  4. In a bowl, add the zucchini pulp, tuna, parmesan, egg, chopped garlic and parsley, salt and pepper.
  5. Mix all the ingredients well.
  6. Finally, add the breadcrumbs.
  7. Use the mixture obtained to stuff the courgettes, then sprinkle with more breadcrumbs.
  8. Bake in a static oven at 200° for 40 minutes.
