Zucchini balls: ready in 5 minutes and without bread

Even better than meat, these zucchini balls are very tasty, especially if accompanied by their perfect sauce.

A delicious and inviting idea to prepare for a finger food aperitif with old friends, or to offer to the little ones, who are always a little reluctant to consume vegetables. Presented in this way, you will convince them to taste, we are sure of it. And we assure you that they will also ask for an encore!

Zucchini balls: ingredients and preparation:

For this recipe, get:

  • courgette, 1
  • egg. 3
  • carrot, 1
  • potatoes, 2
  • semolina, 2 tbsp
  • spring onion , 1
  • sale, q.b.
  • black pepper , to taste
  • vegetable oil , to taste

for the accompanying sauce:

  • sour cream or yogurt, 2 tbsp
  • aneto, qb
  • garlic, 1 clove

Wash the zucchini and peel it with a potato peeler, then trim it. Now grate them with a tool with large holes, you have to cut them into julienne strips.

Place them in a colander, then in a bowl that contains it, sprinkle them with a pinch of fine salt, mix, then let them rest so that they lose the liquid from the vegetation.

Clean the carrot, peel the potatoes and grate both vegetables.

Vigorously squeeze the matchstick potatoes to remove the water, do the same with the courgettes, then combine all the vegetables in a single container.

Slice the chives, add them to the bowl. Add the eggs, salt and black pepper. Now mix everything with a spoon to obtain a uniform mixture. Finally, add the semolina to thicken your meatballs.

Pour a drizzle of seed oil into a non-stick pan. Put it on the gas on a merry flame. Take a knob of dough at a time, make a ball, crush it between your hands to squeeze out the excess liquid and place it in the pot, continue in this way until all the ingredients are used up.

Let them brown on both sides.

In the meantime, prepare the accompanying sauce. Put two tablespoons of yoghurt or sour cream in a bowl, crush the garlic clove and mix it with the chopped fresh dill.

When the meatballs are well cooked, remove them with food tongs. Dab them and plate them.

Serve them with their fragrant dressing.
