Penne  with salmon and cream is a quick and tasty first course , a super creamy variation of the classic salmon pasta . Ready in less than 30 minutes, they are perfect for a family lunch or an informal dinner with friends, even if organized at the last minute: you only need a few ingredients, genuine and easy to find.

All that remains is to drain the pasta al dente and pour it directly into the pan with the sauce, stir and garnish the dish with chopped chives , for a pleasant note of freshness. How to prepare penne with salmon and cream

Step 1

To prepare the penne with salmon and cream, start by placing the butter in a non-stick pan1and then melting it.

Step 2

When it is very hot, add the pieces of fresh salmon2, mix and let them brown for a few minutes.

Step 3

Flavor the salmon with a squeeze of lemon juice3and continue cooking.

Step 4

Pour the whiskey4and let the alcohol evaporate.

At this point, add the cream5and mix well, trying not to break up the fish too much, then season with salt and pepper. In the meantime, boil the pasta in lightly salted boiling water, according to the time indicated on the package.

Drain the pasta al dente and transfer it directly to the sauce6, then sauté everything in a pan for a few moments over high heat.

Advice

We used a fresh salmon fillet, cleaned, deboned and cut into cubes; you can ask your trusted fishmonger to help you with this operation, or opt for slices of smoked salmon , cut into thin strips. To give a touch of color and flavor, you can also add some datterino tomatoes cut in half, to be sautéed in a pan together with the butter and the fish.

Instead of chives, you can flavor the dish with a sprig of dill, pink peppercorns or ground pepper, or the grated zest of an organic lemon , which will give it a great aroma.

You can replace the whiskey with classic dry white wine , or with brandy or vodka: if the dish is intended for the little ones in the house, however, remember to omit them and use only the lemon juice.
