CHICKEN TINGA TOASTS

INGREDIENTS

For the Chicken Tinga:
1 kg chicken breasts
1 small onion, sliced
4 red tomatoes
2 to 4 chipotle chiles or to taste
½ cup water or broth
1 bay leaf
Salt and pepper to taste
To serve:
Toasts
Avocado
Lettuce
Fresh cheese
Cream
Radishes

INSTRUCTIONS

Place the chicken breasts in a small pot, cover with water and add salt. Bring to a boil over high heat, reduce heat to low and cook until cooked, approximately 20 to 25 minutes (depending on size). Let cool slightly and shred.
Blend the tomatoes, chipotle, salt, pepper and water or broth.
Cook the onion in a little oil for about 3 to 4 minutes or until soft.
Add the blender mixture and bay leaf and cook for 3 minutes.
Add the shredded chicken, season to taste with salt and pepper and mix well.
Cook for 5 to 8 more minutes.
After the time has elapsed, remove the bay leaf and serve as you like.
