How to make lentil soup with vegetables

Lentil Soup with Vegetables

To prepare this delicious soup, you will need:

Ingredients:

  • 1 cup dried lentils
  • 6 cups of vegetable broth
  • 2 carrots, diced
  • 2 stalks celery, sliced
  • 1 chopped onion
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (400 g) crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon sweet paprika
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Chopped fresh parsley, to decorate (optional)

Preparation:

  1. Start by washing the lentils under cold water to remove any impurities. Then soak them in clean water for at least 30 minutes. This step will help soften the lentils and reduce cooking time. After soaking, drain and rinse again.
  2. In a large pot, heat some olive oil over medium heat. Add the chopped onion and garlic and sauté until golden and fragrant, about 3-4 minutes.
  3. Add the carrots, celery, and red pepper to the pot. Cook the vegetables for about 5 minutes, stirring occasionally, until tender.
  4. Add the tomato paste, ground cumin, sweet paprika, salt and pepper to taste to the vegetables in the pot. Stir well to combine all ingredients and cook for 2 more minutes. Then, pour in the crushed tomatoes and mix everything.
  5. Add the drained lentils to the pot along with the vegetable broth. Increase the heat and bring the soup to a boil. Once it boils, reduce the heat to medium-low, cover the pot, and let the soup simmer for about 25-30 minutes, or until the lentils are tender.
  6. Once the lentils are cooked, taste the soup and adjust the seasoning to your personal taste. Serve the soup hot, sprinkled with a little fresh chopped parsley on top, if desired.
