HOMEMADE GREEN SALSA.

  • RECIPE INGREDIENTS.
  • 500g green tomatillos (small green tomatoes).
  • 1 medium onion, cut into quarters.
  • 2 garlic cloves.
  • 1 green chili (you can adjust the amount according to your taste for spiciness).
  • A handful of fresh cilantro.
  • Juice of 1 lemon (optional).
  • Salt to taste.
  • PREPARATION METHOD.
  • Tomatillo preparation:
  • Remove the husks from the tomatillos and wash them well to remove any sticky residue they have.
  • Cooking the ingredients:
  • In a large pot, put the tomatillos, onion, garlic cloves and green chili.
  • Cover with water and bring to a boil.
  • Cook over medium heat for about 10-15 minutes, or until the tomatillos are soft and cooked.
  • Blend:
  • Once cooked, remove the ingredients from the pot and place them in a blender along with the fresh cilantro and lemon juice (if you decide to use it).
  • Add salt to taste.
  • Mix:
  • Process everything until you obtain a smooth, homogeneous sauce.
  • If the sauce is too thick, you can add a little of the water from cooking the tomatillos to adjust the consistency.
