Eggplant timbale: better than parmigiana. Only 180 calories!

Vegetables are one of the highest-fiber, lowest-calorie foods there are. This is why it is always excellent to include them in your diet, perhaps through appetizing recipes like the one we present to you below.

The ingredients

We need:

250 g of light ricotta cheese
200 g of spinach
200 ml of tomato puree
120 g of grated scamorza cheese
50 g of grated Parmesan cheese
four aubergines
two sheets of lasagna
four tablespoons of extra virgin olive oil
as needed basil
as required garlic powder
as required enough salt and pepper

The preparation

The first thing is to remove the cap from the aubergines, then cut them lengthwise into slices about one centimeter thick, after which they are placed on a baking tray lined with baking paper which we will have brushed with a drop of oil.

Now let’s fix your vegetables with a pinch of salt and a sprinkling of basil, then put them in a preheated oven at 200 degrees for about twenty minutes.

Meanwhile we chop the spinach with a knife, put it in a bowl, add the ricotta, salt, pepper and a drizzle of oil, then mix everything with a spoon.

Now pour the tomato puree into a bowl, add a drizzle of oil, salt, pepper and basil and mix to give flavor to everything, then add the garlic too.

Now wet a ceramic pan with oil, place the aubergines on top, placing them on the edge and on the bottom, then spread a sheet of lasagna on it, fill it with two spoonfuls of spinach filling, a drizzle of oil, two spoonfuls of and a sprinkling of Parmesan and scamorza.

Now add the other aubergines, roll out the remaining lasagna sheet, stuff with the spinach, two or three spoonfuls of sauce, a drizzle of oil, the scamorza cheese, the Parmesan and other aubergine slices, then cover by folding the aubergines that we had put on the edge and seasoned with sauce, scamorza and parmesan.

The last step is to put it in the oven at 180 degrees for half an hour.
