For the cake:

  • 60 gr of Plums
  • 2 tbsp flax seeds
  • 230 gr of Carrots
  • 80 gr of Oats
  • 60 gr of Almonds
  • 100 ml of milk
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • a pinch of salt
  • Sugar substitute (Stevia): 2 teaspoons

For the cream:

  • 600 gr of Ricotta

Preparation

Cake preparation:

  1. Prepare the plums : Soak 60 grams of plums in boiling water for 10 minutes. Then chop them finely.
  2. Prepare the flax seeds : Mix 2 tablespoons of flax seeds with 90 ml of water and let it sit until it thickens.
  3. Prepare the carrots : Finely grate 230 g of carrots.
  4. Mix the dry ingredients : In a large bowl, combine 80 grams of oats, 60 grams of chopped almonds (previously crushed with the oat flakes), 1 teaspoon of baking powder, 1 teaspoon of cinnamon and a pinch of salt.
  5. Mix the wet ingredients: Add the grated carrots, chopped plums and flax seed mixture to the dry ingredients. Add 100 ml of milk and 2 teaspoons of stevia. Mix well until you obtain a homogeneous mass.
  6. Bake : Preheat the oven to 170° C. Line a baking sheet with parchment paper and spread the dough into a thin layer about 0.5 cm high. Bake for 20-25 minutes or until a toothpick inserted into the center of the cake comes out clean.

Preparation of the cream:

  1. Mix the ricotta : In a bowl, mix 600 grams of ricotta until you obtain a smooth and creamy consistency. It is recommended to add yogurt to the mixture with the ricotta, to achieve a soft and sweet texture.
  2. Then, we transfer it to a sleeve to better manage the application of the cream.

Cake assembly:

  1. Once we remove the cake from the oven, we proceed to cut it into 4 parts.
  2. Next, we place one of its parts as a base on a large plate to assemble the cake. Below, we add a little of the ricotta cream.
  3. Next step, we apply the cream to the entire surface of each layer and so on until the cake is complete.
  4. To finish, with the help of a spatula, cover the entire surface of the cake with the cream and also its sides.
