  • 4 cloves of garlic
  • 2 tbsp white vinegar
  • 1/2 lemon squeezed
  • 1/2 large onion (chopped)
  • Black pepper to taste
  • Chimichurri to taste

Preparation

  1. To begin seasoning properly, first make several random cuts in the piece of meat. This is crucial to allow all the seasonings to penetrate the meat evenly.
  2. Then, place the crushed garlic cloves, black pepper and lemon juice under the piece. Distribute these ingredients evenly over all the meat with your hands.
  3. Add the onion and chimichurri, and let sit for about 2 hours so the meat can absorb all the flavors.
  4. Preheat the oven to 280° C and cover the mold with aluminum foil. Bake for an additional 2 hours.
  5. Finally, remove the aluminum foil and leave the meat in the oven for a few more minutes so that the surface browns.
