Rigatoni in basil cream with pancetta and cherry tomatoes are a delicious dish, perfect for lunch or dinner. This recipe is very easy to prepare, nutritious and tasty, making it an ideal option to share with the family.

Ingredients

  • 250 g of Pasta (rigatoni)
  • 80 g of bacon
  • 1 onion of your choice
  • 1 clove garlic
  • 20 cherry tomatoes
  • 50 g of Basil
  • 40 g of Parmesan cheese
  • 30 ml of olive oil
  • 30 ml of water
  • Salt and pepper
  • 1 hot pepper to taste

Preparation

  1. To begin, chop the onion finely, crush the clove of garlic and cut the 80 grams of bacon into small pieces.
  2. Then, in a frying pan over medium heat with a splash of oil, add everything and let it cook until golden brown for a few minutes.
  3. Meanwhile, heat enough water for the pasta in a saucepan over moderate heat.
  4. Continue with the cherry tomatoes, they are cut into halves and added to the pan with the other ingredients. They should be cooked until soft and sprinkle with pepper to taste.
  5. Meanwhile, grate the Parmesan cheese.
  6. On the other hand, in a processor add the basil leaves, olive oil, water, season with salt and pepper and add the grated cheese. Everything is crushed until a paste is obtained.
  7. When the water is finally ready in the saucepan, add salt to taste and the pasta. While they are cooking, you can add a few tablespoons of hot water to the tomatoes in the pan.
  8. Finally, the pasta is poured with the tomatoes, mixed and the basil sauce is also added.

Ingredients

  • 250 g of Pasta (rigatoni)
  • 1/2 Cabbage
  • Bacon to taste
  • 1 clove garlic
  • 1 hot pepper to taste
  • 40 g of Parmesan
  • 20 ml of milk
  • Salt and pepper
  • Olive oil

Preparation

  1. First, cut the bacon into small pieces, crush 1 clove of garlic and place it in a frying pan over medium heat with a splash of olive oil until golden brown.
  2. Then, remove the garlic clove from the pan and the bacon pieces into a container.
  3. On the other hand, we cut the cabbage and put it in the pan with the remaining oil left by the bacon. While the cabbage is stirred, season with salt and pepper and let it cook over low heat.
  4. Meanwhile, grate the Parmesan cheese.
  5. Also, heat a small pot with water and a pinch of salt for the pasta. When it reaches the desired temperature, it’s time to add the pasta to the pot.
  6. Next step, remove the cabbage from the pan and place it in the jar to shred (reserve a little in the pan). Also add the grated cheese, 20 ml of milk and grind it until you obtain a paste.
  7. Finally, pour the pasta into the pan along with the rest of the cabbage, the sauce, and a few drizzles of olive oil and mix very well.
