My homemade cornstarch cake (Easy and Fluffy)

This homemade Cornstarch cake is very easy to prepare, we just have to whip the egg whites well so that we end up with a very spongy cake.

It is such a delicious cake that we can have it at any time of the day. In addition,  as it is made with cornstarch, it is suitable for celiacs, since it does not contain gluten .

Ingredients

  • 120 g of Cornstarch
  • 130g sugar
  • 90 ml olive oil
  • 3 eggs
  • 1 lemon
  • 1 sachet of raising agent (1 teaspoon of baking powder or baking powder also works)

Instructions

We begin by separating the yolks from the whites, taking care that they do not mix (that there are no traces of yolk in the whites) so that they whip up well.

When the whites are assembled, we reserve them.

Now we continue with the yolks that we had separated, putting them in a bowl, adding the sugar and mixing well.

Next we add the olive oil to the mixture and beat until well integrated.

At this point we add the lemon zest and the sachet of raising agent. You can also use chemical yeast or baking powder.

Now we sift the Cornstarch and mix well until we obtain the dough for our cake.

Don’t worry if you end up with a very dense dough that is difficult to mix, as it doesn’t have a lot of liquids this is normal. Once we incorporate the egg whites (in the next step), the dough becomes more manageable.

Little by little, and with soft and enveloping movements, we integrate the egg whites with the rest of the dough. We will do this step very carefully, so that the whites do not lower, and thus we will have an airy and spongy cake.

Now is the time to prepare our cake to put it in the oven. To do this, we line the mold with baking paper, so that the cake does not stick, and we add the dough.

We put the cake in the oven, preheated to 180ºC, and bake it for 30-35 minutes (depending on each oven).

When the cake is ready, we take it out of the oven, letting it rest for 10 minutes in the mold, then unmold it onto a rack and let it cool. By placing the cake on a rack we prevent it from becoming moist.
