Zucchini and ricotta: super good pancakes, not fried and with only 60 calories!

These zucchini and ricotta fritters that we offer below are very simple to prepare and do not need any type of frying. It is a delicious and tasty dish that will satisfy your whole family, including children.

But let’s see immediately what we have to do to complete this very tasty recipe.

The ingredients

To prepare fifteen pancakes of 60 calories each, we need these ingredients:

40 g of grated Parmesan
Breadcrumbs as required
1 clove of garlic
Extra virgin olive oil as required
250 g of light ricotta cheese
1 egg
Basil as required
Salt as required
Parsley as required
Pepper as required
60 g of scamorza cheese
three courgettes

The preparation

It will take very few minutes to prepare these somewhat sui generis “pancakes”.

The preparation begins by washing the courgettes and then drying them with absorbent paper. After that we cut off the ends and then grate our zucchini. The inner part, which is more watery, should not be grated.

Now transfer this zucchini pulp into a large bowl, then add the eggs and the scamorza cheese cut into matchsticks. Let’s go on adding the ricotta, the grated garlic, the chopped parsley and basil and finally the grated Parmesan. After that, all that remains is to add pepper and salt and mix all the ingredients well.

When the mixture appears well blended, add the breadcrumbs. Now let’s mix again and with the mnai we shape our “pancakes”, not pancakes.

So we get a baking tray, line it with baking paper, sprinkle a little breadcrumbs on it and then arrange our pancakes in a nice order.

Wet with a drizzle of oil and put the pan in a hot, static oven. Let’s go at a temperature of 180 degrees for twenty, twenty-five minutes. In a convection oven instead we will have to cook at 175 degrees, always for the same minutes.

After 25 minutes, all that remains is to bring the fruit of our labor to the table.
