Marinated Herring Recipe

Ingredients:

  • 2 herrings
  • 3 onions
  • 1 tablespoon salt
  • 20-30 coriander seeds
  • 10-12 black peppercorns
  • 10-12 allspice seeds
  • 1/2 teaspoon mixed pepper
  • 1 minced garlic clove
  • 4 tablespoons tomato sauce or ketchup
  • 1 teaspoon mustard
  • 1 tablespoon natural honey
  • 60 ml apple cider vinegar
  • 120-130 ml sunflower oil
    Instructions:
  • Preparation of the Herrings:
    1- Clean the two herrings by removing the head, tail and all fins. Wash them well inside and out.
    2- Remove the spine and all the bones to obtain fillets. Cut each fillet into strips about 2 cm thick.
  • Marinade Preparation:
    1 – Cut the three onions into thin slices.
    2 – In a small pot, add the salt, coriander seeds, black pepper, allspice, chopped garlic and mixed pepper.
    3 – Add the tomato sauce or ketchup, mustard, natural honey and apple cider vinegar.
    4- Add the sunflower oil.
    5- Heat the mixture without boiling, just until it is very hot and all the ingredients are well mixed. Then, let it cool to room temperature.
  • Assembly:
    1 – In a large jar, place a layer of sliced ​​onions on the bottom.
    2 – Place a bay leaf on top of the onions and then a layer of herring.
    3 – Pour 3-4 tablespoons of the marinade over the layer of herring.
    4 – Repeat the layers until the entire jar is full. Close tightly with the lid.
  • Marinade:
    1 – Place the jar in the refrigerator and let it marinate for exactly one day, or a little longer if you wish.
  • Serve:
    1 – After one day, remove the jar from the refrigerator and serve. The marinade will have been absorbed by the herring and onions, making them delicious to enjoy.
