Terrine of fresh fruit with almond cream: simple and irresistible!

Today we present the recipe for a delicious dessert that you will surely like: fresh fruit terrine with almond cream, synonymous with real goodness! It’s perfect for beginners or for anyone afraid of missing out on a snack.

This terrine of fresh fruit with almond cream is a solution that lends itself to more than one occasion, impressive and above all exquisite and to be combined with a good fresh drink.

Ingredients:

  • 250 g of softened butter
  • 250 g of almond powder
  • 3 egg yolks
  • 125 g of icing sugar
  • 60 g of granulated sugar
  • 3 sheets of gelatin

For the fruit :

  • 4 kiwi barrels
  • 2 bananas
  • 125 g of strawberries
  • 1 pineapple

For the grout:

  • 200 g of red fruits
  • 50 g of granulated sugar
  • juice of half a lemon

Preparation:

How to prepare this terrine of fresh fruit with almond cream?

In a bowl, beat together the butter, powdered sugar and ground almonds. In a bowl, mix the egg yolks and granulated sugar with 2 tablespoons of water until you get a frothy mixture. Add the gelatin, soften it in cold water and then add the gelatin, mix, add to the egg-sugar mixture.

Peel the fruit. Clean and cut the washed strawberries. Cut the kiwis and bananas into slices and the pineapple into chunks.

Take a bowl or pan. Line with cling film. Pour a little almond cream on the bottom. Arrange the kiwis on the sides, the strawberries in the center and cover with a thin layer of cream. Arrange the bananas on the sides and the pineapple in the center and cover with the remaining cream.

Close the bowl with plastic wrap and place in the fridge for 3 hours.

Mix the red fruits, sugar and lemon juice and set aside.

Unmold the terrine. Serve with the coulis.
