Mini eclairs with cheese and garlic!

An interesting appetizer for the New Year’s table and not only: it is suitable for any festive table, being able to replace the usual canapés. Mini eclairs with salty filling will surprise your guests and delight them with their unique taste. Try to prepare them!

INGREDIENTS:

For the scalded dough:

-250 ml of water;

-100 g of butter;

-½ teaspoon of salt;

-180 g of flour;

-4 eggs.

For the filling:

-200 g of cheese;

-3 large cloves of garlic;

– a small bunch of dill;

-2 tablespoons of mayonnaise (or to taste).

From these new ingredients we obtained 55 mini eclairs.

METHOD OF PREPARATION:

1. Prepare the scalded dough: put the water, salt and butter in a heavy-bottomed saucepan or a saucepan. Place over moderate heat and bring to a boil.

2. Take the resulting solution off the heat and add all the sifted flour to it. Mix vigorously with the spatula. In less than a minute you should get a homogeneous and smooth dough.

3. Cover the dough with a clean kitchen towel and let it chill for about 60 minutes.

4. Gradually incorporate (one at a time) the eggs into the warm dough, mixing each time with the mixer or spatula until homogenized. As a result, you should get a smooth, glossy and fairly dense dough.

5. Transfer it to a pouch.

6. Cut the tip of the bag so that you get a hole with a diameter of about 1 cm. Apply the dough in the form of short strips, 4-5 cm long, on the tray lined with baking paper or a silicone sheet.

7. Bake the mini eclairs for 10-15 minutes, until they rise, in the oven preheated to 220 °C. Then reduce the temperature to 180°C and continue to bake them until golden brown (we needed 27 minutes in total). Do not open the oven door during baking!!!

8. Remove the mini eclairs from the oven and prick them with a toothpick to release the hot air inside. Let them cool to room temperature.

9. Prepare the filling: mix the grated cheese, the garlic passed through the garlic press, the chopped dill and the mayonnaise.

10.Incompletely slice each eclair on the side using a sharp knife. Fill it with cheese mixture.

11. Place the mini eclairs on a plate.

12. Serve them with great pleasure!
