Salad, also known as Olivier salad, is a classic dish that originated in Russia in the 19th century. It is often made with vegetables, potatoes, hard-boiled eggs, chicken or ham, and mayonnaise. Ingredients
2 cups cooked and diced potatoes
2 cups of cooked and diced carrots
1 cup cooked peas
1 cup diced cucumber
1/2 cup chopped green onions
2 tablespoons light mayonnaise
2 tablespoons low-fat Greek yogurt
1 tablespoon Dijon mustard
1 tablespoon cider vinegar
Salt and freshly ground black pepper to taste
Preparation
In a large bowl, combine potatoes, carrots, peas, cucumber and green onions.
In a small bowl, combine mayonnaise, Greek yogurt, Dijon mustard, cider vinegar, salt and pepper.
Add the dressing to the salad and mix well.
