Zucchini roses with 90 calories per slice: rustic ready in minutes! Today’s recipe can essentially be made with just a couple of zucchini. It is a cake that is soft on the inside and crunchy on the outside.

The ingredients

We need:

two courgettes
enough breadcrumbs
a sprig of parsley
two cloves of garlic
extra virgin olive oil to taste
an egg
40 ml of milk
30 g of grated parmesan cheese plus a spoon
salt and pepper

The preparation

First of all wash and cut the zucchini, rather fine. Then they are placed in a colander and sprinkled with salt, this will purge them of their vegetation water.

After about twenty minutes we squeeze them gently and continue with the recipe. Pour a glass of extra virgin olive oil, two finely chopped garlic cloves, a sprig of chopped parsley, salt and pepper into a bowl. If we have time, we leave everything to rest for half an hour, so that the oil takes on the flavor of all the aromas.

After thirty minutes, all we have to do is pour this flavored oil over the courgettes: let’s say four spoonfuls are enough.

Now we grease a pan with the same marinade as above. The next move is to bread the courgettes, after which we roll them up and put them vertically in the pan. When we no longer have zucchini to arrange in the pan, we beat the egg with the milk and the Parmesan and pour this mix on our zucchini.

We now use the breadcrumbs left over from the breading to dust the surface of our rustic cake: even a spoonful of Parmesan will do just fine.

Now all that remains is to place in a ventilated oven at 190 degrees for 30 minutes.
