“Blizzard” cake. There is no other simpler!
A good-looking, smooth, moist and delicious dessert! It is prepared from simple and available ingredients, but it conquers everyone with its special taste!
INGREDIENTS:
For the dough:
-4 eggs;
-4 tablespoons of flour;
-4 tablespoons of fermented cream;
-4 spoons of sugar;
– a teaspoon of baking powder;
-a pinch of salt.
For the cream:
-650 g of fermented cream;
-2-3 spoons of powdered sugar (or to taste);
-5 g of vanilla sugar;
Other: coconut flakes — for decoration.
METHOD OF PREPARATION:
1. Prepare the dough: separate the whites and yolks of eggs just taken out of the refrigerator.
2. Beat the cold egg whites until they become foamy, adding a pinch of salt. Then add 2 tablespoons of sugar and mix until stiff peaks form.
3. Beat the egg yolks with 2 tablespoons of sugar until they become fluffy and whitish.
4.Incorporate the egg yolks into the egg whites, mixing with a spatula in quick, circular movements from bottom to top.
5. Add the sour cream. Incorporate it into the egg mixture using the same kind of careful movements.
6. Gradually incorporate (in 2-3 steps) the sifted flour together with the baking powder into the obtained composition, mixing with the spatula, using the same movements.
7. Transfer the dough to a round pan, with a diameter of 18 cm and the bottom lined with baking paper, greased with oil. Spread it evenly.
8. Bake the top for 35-40 minutes in the oven preheated to 180 °C. Check it’s done by the toothpick test.
9. Let the top cool a little, then separate it from the walls of the pan with a thin knife and remove it from it. Remove the parchment paper from its surface and let it cool completely by placing it on a wire rack.
10.After it cools down to room temperature, cut it into 2 equal parts.
11. Prepare the cream: put 400 g of sour cream in a strainer lined with 2-3 layers of cheesecloth. Cover it with cheesecloth and either hang it from a hook or place a weight over it. Wait until all the whey is drained from it: this way you will get a thicker cream.
12. Put the cream separated from the whey (its weight should be about 250 g) and another 250 g of regular cream in a deep bowl. Add the powdered sugar and vanilla sugar. Beat everything with the mixer until you get a thick and homogeneous cream.
13. Assemble the cake: put the lower top on a plate and spread it with a thick layer of cream. Then cover it with the top.
14.Grease the surface and edges of the cake with a generous layer of cream.
15. Sprinkle the surface and edges of the cake with coconut flakes.
16. Refrigerate the cake overnight.
17. Portion it and serve it with pleasure!
