Vegetable Croquettes: Quick and Easy to Make!

A healthy and delicious alternative to traditional croquettes. They are made with mixed vegetables and flour, then breaded and fried until crispy. Served with a sauce or dressing, these croquettes are a perfect option for a healthy lunch or dinner.

Ingredients

  • 1 kg of potatoes
  • 200g carrots
  • 200g peas (can be frozen)
  • 200g green beans (can be frozen)
  • 1/4 cup chopped parsley
  • salt
  • pepper
  • 2 eggs
  • 100g parmesan
  • 3-4 eggs, beaten
  • 2 cups of breadcrumbs

Preparation

  1. Boil and peel the potatoes and carrots.
  2. Cut carrots, green beans. Mash the potatoes, add 2 eggs, salt, pepper, parmesan.
  3. Add carrots, peas, asparagus beans, parsley.
  4. Form balls and press with a flat cup bottom.
  5. Dip in egg, then in breadcrumbs and fry until golden brown.
