Italian Green Bean Salad

A great balance I find, a nice humble way to enjoy green beans. To be served as an appetizer or side dish to a light dish or even (by doubling the quantities per person) as a single dish with bread on the side.

Ingredients

  • 2 onions
  • 1/2 red pepper
  • 200g fresh or canned green beans
  • 2 tbsp olive oil
  • A fresh tomato (if not, use canned tomatoes)
  • 20 cl of tomato coulis
  • Basil
  • Garlic powder
  • Thyme
  • Laurel

Preparation

  1. Peel the onions and slice them, sweat them in a pan with a little olive oil.
  2. Slice the red pepper and add it to the pan, cook over low heat.
  3. If you are using canned beans, please drain them, then rinse them in cold water to remove excess salt and preservatives.
  4. Stir in the green beans with the bell pepper and fried onions.
  5. Cut a fresh tomato into slices (you can use canned tomatoes if not) add the tomato cut into slices, cook and finish with the addition of a tomato coulis.
  6. Season to your liking: basil, bay leaf, garlic powder, thyme, cover and cook over low heat for 1/2 hour, serve!
