No-Bake Chocolate Truffles: The Easy Bite-Size Treats Recipe

These Chocolate Coconut Truffles can be stored in an airtight container in the fridge for up to a week. But we think you’d want to eat them all first! They can also be frozen.

Ingredients

  • Grated coconut
  • 350g (3.5 cups)
  • Sweetened condensed milk
  • 190 ml (0.62 cup)
  • Chocolate
  • 200g (2 cups)

Preparation

  1. Add grated coconut to a large glass bowl.
  2. Add condensed milk.
  3. Use a rubber spatula to thoroughly mix the condensed milk with the coconut. It should be at a consistency where it is easy to form balls.
  4. Use an ice cream scoop to measure equal amounts of the coconut mixture. Form balls.
  5. Place the balls on a plate and let rest.
  6. Prepare a double boiler by placing a heatproof bowl over a pan of slightly boiling water. Heat should be kept to a minimum and the container should not touch the water.
  7. Use the bain-marie set up to melt the chocolate.
  8. Use a spoon to dip the coconut balls into the melted chocolate.
  9. Add to parchment paper.
  10. Dip all the balls in the chocolate and place them on a sheet of parchment paper to dry.
  11. Garnish with chocolate shavings and coconut flakes.

Remarks

  • When you start mixing the grated coconut with the condensed milk, it will look dry at first. But keep mixing the coconut until all the coconut is evenly coated. The mixture should be sticky and form easily into balls.
  • You can store the rolled coconut balls in the fridge for about an hour to help them set better. It will also make it easier to dip into the melted chocolate.
  • You can use shredded coconut instead of shredded coconut, but you may need to use more condensed milk.
  • Because these Chocolate Coconut Truffles are decadent little bites, it’s best to use high-quality chocolate (like Ghiradelli).
  • You can add other mixes to your coconut balls. Try chopped nuts, cranberries, or even caramel bits. The possibilities are limitless!
  • How to dip truffles in chocolate? Dipping chocolate coconut truffles is a messy business! It’s definitely easier to make if the truffle balls are cold. So be sure to add them to the fridge before soaking. A fork will also come in handy, as it allows excess chocolate to drip off. If you want something sweeter (only for the big eaters), you can dip the coconut balls in white chocolate. If you want something less sweet, use dark chocolate (bittersweet).
