Fried Potato Clouds: They are phenomenal!

These fried clouds are wonderful and among the ingredients you can also find an anti-waste ingredient! They are based on potatoes and this is already an indication of gluttony, enriched by the presence of chopped celery leaves. If you normally discard them because you only use the stem, know that they are rich in mineral salts, they are diuretics, but above all they are very fragrant and add a tasty note to your preparation.

Offer them as an aperitif to lifelong friends, guests for an informal dinner, you will enchant them with an extraordinary recipe. Or present them at the table to delight the palate of the little ones of the house. They will ensure you great success.

Fried clouds: ingredients and preparation

For this recipe, get:

  • 300 grams of potatoes
  • 1/2 teaspoon salt
  • 15 grams of sugar
  • 20 grams of corn starch
  • 20 grams of rice flour
  • 1/2 teaspoon baking powder
  • 3 grams of celery leaves
  • seed oil for frying, to taste

Chop the celery leaves finely with the mezzaluna.

Peel the potatoes, then cut them into cubes. Place them in a saucepan, submerge them with water, place them on the stove and bring to the boil. Boil them for 15 minutes.

Drain them and transfer them to a bowl, then mash them with the prongs of a fork or with the special tool, you have to reduce them to a puree. Add the salt, sugar, rice flour, corn starch and baking powder. Finally, add the chopped celery leaves and mix thoroughly. You have to get a very compact compound. Now transfer everything into a food bag with a zip (about 18×25 cm) and roll out with a rolling pin. You have to get a rectangle, cut it with a knife to free it from the plastic, then cut it into strips, then into squares.

Now pour plenty of seed oil into a saucepan and bring it to the smoking point. Dip the squares, a few at a time and fry them turning them on each side. You will see them inflate dramatically. Drain them with a slotted spoon and pat them dry.

Serve them still hot and steaming. I am a marvel!
