Cauliflower and kale are two delicious vegetables and combining their flavor in an omelette is truly something unique. Simple to make, you can also think of preparing it as an accompaniment to an aperitif. But it can also be easily served as a second course during a dinner with family or friends. Below you will find the list of all the ingredients that you will need to use to prepare the frit, following the instructions below.

Ingredients

  • 200 g of cauliflower florets
  • 100 g of black cabbage already blanched
  • 50 g of grated Parmesan cheese
  • 4 free range eggs
  • 2 tablespoons of milk
  • 1 white onion
  • 1 tablespoon of 00 flour

Procedure

Start preparing this dish by taking the cauliflower and selecting only the florets. Then take a saucepan with high edges, boil water to blanch the florets for about ten minutes. Once this is done, drain them and leave them to cool under running water. Now it’s time to move on to the onion .

Peel the onion and chop it into cubes. Then take a non-stick pan and after putting a drizzle of olive oil, pour the onions and let them dry . Wait for them to become transparent and then add the already blanched cauliflower florets. Sauté them in a pan for a few minutes, season with salt and pepper and then leave to cool.

Now take a large bowl and pour two egg yolks inside , which you will beat with the milk and the sifted flour. Now, add salt, pepper and grated cheese. Then take the leftover egg whites and whip them until stiff and then add them to the mixture you have just prepared, always mixing from the bottom up so as not to disassemble everything.

At this point, chop the black cabbage . Then add it to the dough with the cauliflower. Mix everything slowly, then take a round baking pan or cake tin and pour the mixture into it, first lining it with baking paper. Preheat the oven to a temperature of 180°C and cook for about 15 minutes. At this point you can remove from the oven and serve while still hot, placing the omelette on a serving plate. Enjoy your meal.
