Easy to Make Homemade Baguette Bread

Small, crispy baguettes with an airy crumb and a nice crust, easy to make at home to enjoy fresh bread every day without going to the bakery.

Ingredients 

  • 10 g dried baker’s yeast
  • 400ml lukewarm water
  • 8 g se
  • 500 g flour (I used T55)
  • Seeds of your choice (optional)

Preparation

  1. Start by placing the yeast in a container. If you want to use fresh yeast, double the amount and crumble it, but I find this recipe lends itself better to dehydrated yeast.
  2. Add a little lukewarm water (taken from 300 ml).
  3. Let the yeast dissolve for about ten minutes.
  4. Add the rest of the water, then the salt. To weigh the yeast and the salt, I advise you to do so with a precision scale, it is still more precise than conventional scales.
  5. Finally, add the flour all at once.
  6. Mix. It does not matter if the dough is not perfectly homogeneous. The lumps will disappear during cooking.
  7. Cover the container with a clean tea towel and leave to rise for 1 hour 30 minutes in a warm place. The best thing is to put a bowl of boiling water in the dripping pan of your oven and place your container in the closed oven. It’ll be an oven.
  8. After an hour and a half, the dough will have risen well.
  9. Preheat the oven to 240°C, leaving the water in the pan.
  10. Pour the batter directly into the buttered and floured baguette moulds. You’re going to have a little trouble, but I’ve tried everything and I think it’s really the best technique! Do not hesitate to spread the dough a little with a spatula.
  11. I also tried with baking paper, which is really difficult because the paper slips.
  12. I also tried to shape my baguettes a little but the dough is really too sticky, it’s mission impossible (and then it hardly changes the result anyway).
  13. Draw small grooves on the baguettes with a baker’s blade. It’s more for fun than anything else because, as we didn’t knead, the dough takes the shape it wants, but I do it anyway.
  14. You can add seeds to your chopsticks if you wish. I tested with sesame seeds, sunflower seeds and poppy seeds. Everything is great!
  15. Bake for 25 minutes.
