Brussels Bodding “Belgian Pudding”

The delicious traditional bodding recipe, an easy, quick and 100% waste-free Belgian (Brussels) dessert? Do you have any bread left after the holidays?! A base of coffee and a few eggs?! Don’t throw anything away, make a bodding.

Ingredients 

  • 900 ml of milk
  • 350 g of dry bread (or almost)
  • 90 g of powdered sugar
  • 2 whole eggs
  • 120 g of raisins and 10 cl of lemon or orange juice

Preparation 

  1. We crumble the bread (it’s tedious but it’s the most “difficult”) in a salad bowl, while in a bowl we mix milk, sugar and eggs with a fork.
  2. Pour the resulting mixture onto the crumbled bread, and let the bread absorb the liquid for a good hour.
  3. During this time, the grapes have an appointment with the lemon or orange juice: on a plate, we place the grapes which we cover with lemon or orange juice, and we also leave time to do so. his work.
  4. Once the hour has passed, stir the bread to obtain a homogeneous mixture and add the well-soaked grapes and the remaining lemon or orange juice.
  5. Everything is then placed in a non-stick cake mold, then heated to 200°C for 1 hour.
  6. Once the cake is swollen, the surface turns golden then slightly brown, it’s time to stop cooking!
