A delicious, simple and economical popular egg kofta tagine

A delicious, popular, simple and economical egg kofta tagine, to be enjoyed with good homemade bread.

Ingredients

  • 500 g of ground beef
  • 3 eggs
  • 1 onion
  • 4 red and juicy tomatoes
  • 1 small bunch of parsley
  • 1 teaspoon of ginger
  • 1 teaspoon of pepper
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • 1 glass of olive oil
  • Salt

Preparation

  1. In a tagine, heat a little oil and brown half of the chopped onion. Add the chopped tomatoes, half of the chopped parsley, ginger, pepper, cumin and paprika. Cook for 15 minutes at a low simmer.
  2. In a salad bowl, knead the minced meat with the rest of the chopped onion, the cumin and the rest of the chopped parsley. Salt, pepper.
  3. Add a glass and a half of water to the tagine. Cover and cook for another 15 minutes.
  4. Take the bowl of meat and lightly wet your hands.
  5. Shape kofta balls between your hands, the size of a golf ball. Arrange them gradually in the casserole, in the sauce. Do not mix and cook for 10 minutes to set the meatballs.
  6. When the meat is cooked and the sauce is well reduced, add the eggs and cook for 5 minutes.
  7. Serve it in a hot tagine dish. You can prepare it in advance to reheat it at the last moment.
