How to prepare fresh cheese with 1 liter of milk, 1 yogurt and half a lemon

Although supermarkets are full of cheeses of all types, one better than the other, it is always useful to know that it is possible to prepare an excellent fresh cheese at home, completely natural and very tasty.

To prepare fresh cheese you need very few ingredients: milk, yogurt and lemon. The result will be an excellent cheese, which you can use for salads, spread on bread or use for other preparations.

Ingredients: 1 liter of fresh whole milk, 1 natural yogurt, the juice of half a lemon, 1 cotton wool gauze, a bowl and a mold of approximately 12 cm in diameter.

Heat the milk to a temperature of 90 degrees for about 15 minutes. Add the yogurt and lemon juice, and mix well.

Set the oven at 90 degrees, and pour all the mixture into the mold. Bake for 2 minutes, until the whey has separated and has taken on a yellow colour.

Place the cheesecloth on the mold and, placing the bowl underneath, pour the contents of the mold directly onto the cheesecloth. The whey will fall into the bowl, while the rennet will remain on the cheesecloth.

Squeeze the gauze well to remove the serum. Pour the rennet back into the mold, and place a weight on top (a full jar or bottle). Place in the fridge for 30 minutes.

Remove the mold from the fridge and remove the cheesecloth. You can add a little salt to the mixture. Transfer the cheese to another container and let it rest in the fridge for another 8 hours.
