To make it, you need the support of oatmeal, 3 eggs, 2 apples and a good sprinkling of cinnamon or vanilla. To decorate it, only nuts and cranberries or raisins. Looking at it like this, it looks like a simple rustic dessert, but at the first bite it releases all the complex flavor of a winning combination.

Ideal for breakfast, for an easily assimilable boost of healthy energy, it provides many fibers and mineral salts. It is sweetened by the mere presence of fructose, which is enough on its own to make it a small and skilful homemade masterpiece. Offer it to the little ones at home too, you’ll be amazed to see them ask for an encore with their mouths watering.

Flourless apple pie: the preparation

For this recipe, get:

  • 300 g of rolled oats
  • 2 bodies
  • 3 eggs
  • 1 tablespoon of baking powder
  • cinnamon, to taste
  • vanilla extract, to taste
  • cranberries or raisins, to taste
  • noci, qb
  • powdered sugar, to taste to decorate

Preheat the oven to 180°.

Line an 18cm diameter cake tin with the special paper, wet and squeezed so that it adheres better to the bottom and edges.

Put the oat flakes in the food processor with the baking powder and reduce them to a very fine powder.

Peel the apples, cut them into cubes, removing the core, then chop them in the kitchen mixer to obtain a sort of puree. Transfer them to a bowl, add the cinnamon and vanilla and distribute them with the spatula. Add the eggs and mix everything with the hand whisk. When the mixture appears uniform and creamy, incorporate the oat “flour” in two different steps, making it completely absorbed.

Now pour everything into the mold and level the surface. Scatter the cranberries or raisins and walnuts, then press down with the spatula to compact. Bake for 40-45 minutes, do the toothpick test before taking it out of the oven because each appliance is different and times are not the same for everyone.

Let it cool completely, then turn it out of the mold and sprinkle it with icing sugar.
