Without flour and without eggs: the healthiest bread there is!

This is the healthiest bread there is: it does not contain flour, eggs or milk. It’s ideal for those suffering from intolerance, but it’s a real delicacy even for those who don’t have any problems! Why? Because it is based on healthy and genuine ingredients: quinoa and buckwheat.

The first is a natural source of rapidly absorbed vegetable proteins; the second is rich in mineral wings such as iron, copper, phosphorus, fluorine, calcium, iodine and vitamins B, E, PP.

At the end of cooking, its reddish and crunchy crust will entice you to taste it. You will thus discover a very soft and sweetish crumb that goes well with any flavor. From sweet to savory, this preparation goes well with any food.

Start the preparation the night before, because you have to soak buckwheat and quinoa for several hours, preferably overnight.

Bread without flour or eggs: ingredients and preparation

For this recipe, get:

  • 250 g of quinoa
  • 250 g of green buckwheat
  • 100ml of water
  • 2 tablespoons of flaxseed flour
  • 1 teaspoon stevia or less (or a tablespoon of sugar/syrup)
  • Sale qb
  • 1 teaspoon of baking soda
  • 4 tablespoons of olive oil
  • 1 tablespoon of lemon juice
  • various seeds (sunflower, chia, pumpkin).

Put the buckwheat in one bowl, the quinoa in another, then pour the water to cover both and mix with a spoon. Drain them and repeat the operation over and over again until the water is clear. Finally leave them to soak for 6/8 hours, better for a whole night.

The next day, drain and put both in a large and capacious container, add 100 ml of water and mix everything with an immersion blender until you obtain a sort of thick and clear cream.

Now add the flaxseed flour, salt, stevia and baking soda. Now pour in the olive oil and squeeze the juice of half a lemon. Mix again with the spatula. When the mixture is uniform. Line a 20×10 cm rectangular pan with the special paper, grease it with a drizzle of oil and transfer everything inside. Level the surface and sprinkle it with various seeds (sunflower, flax, etc.)

Bake in the preheated oven at 180° for 50/60 minutes, a lot depends on the performance of your oven. Take it out when a nice golden crust forms. Let it cool, then unmold it and enjoy the results.
