Classic Custard, Most Used in Pastry

Discover the Custard recipe, a very simple and quick recipe that anyone can make, which will serve as the basis for many desserts such as floating islands, ice creams, etc. It is an ideal accompaniment to soft and fondant chocolate.

Ingredients 

  • 4 egg yolks
  • 500 ml whole milk
  • 120 g of sugar
  • 40 g corn starch (cornstarch)
  • A vanilla berry

Preparation 

  1. In a saucepan, pour the milk and also put the vanilla pod which you will have deprived of the internal seeds, they will be used to flavor the eggs.
  2. Heat the milk over very low heat and in the meantime we can devote ourselves to preparing the eggs for the custard.
  3. In a bowl, mix the yolks with the sugar, vanilla and corn starch, we must obtain a cream without lumps and the corn starch is very useful.
  4. Remove the vanilla pod from the milk and slowly pour the hot milk into the egg yolk mixture, pour it all into the saucepan and stir the cream continuously until it is thick and full-bodied, you don’t have to don’t stop, just a moment and the pieces.
  5. Remove the custard from the heat and immediately pour it into a container to cool.
  6. Variations and tips: It is preferable to use cornstarch not only because it makes its flavor more delicate, but it prevents the formation of lumps and the success of the cream is easier.
  7. You can flavor the custard as you like; instead of vanilla you can put orange zest and if you want to make it with cocoa, simply replace 15 grams of cornstarch with 15 grams of bitter cocoa and add 30 grams of sugar.
