Blender Carrot Cake

Blender Carrot Cake is a delicious and easy-to-make dessert that combines simple ingredients to create a moist, slightly sweet pastry.

Ingredients

  • Medium carrots: 2 (250g)
  • Eggs: 4
  • Vegetable oil: 150 ml (2/3 cup)
  • Sugar: 200 g (1 cup)
  • Flour: 250 g (2 cups)
  • Baking powder: 10 g (2 teaspoons)

Preparation 

  1. Cut the carrots into thick slices.
  2. Preheat the oven to 180°C/350°F. Add the chopped carrots to a medium mixing bowl, along with the eggs and vegetable oil.
  3. Use a hand blender to blend the carrots and eggs until smooth.
  4. Add the sugar and whisk to combine.
  5. Sift the flour and baking powder.
  6. Whisk the batter until smooth.
  7. Pour the dough into a 20×20 cm mold lined with baking paper. Bake for 30-35 minutes.
  8. Use the overhanging pieces of parchment paper to carefully lift the cake out of the pan.
  9. Cut into individual portions and sprinkle with powdered sugar before serving.
