Get to work, let’s get started!

Low carb biscuits: ingredients and preparation

For this recipe get yourself.

  • 200 grams of cottage cheese
  • 50 grams of grated coconut
  • 3 egg whites
  • sweetener to taste (about 1.5 teaspoons if you use stevia).
  • vanilla to taste.

Preheat the oven to 150°. Line the dripping pan with the special paper and keep it close at hand.

Drain the ricotta and transfer it to the food processor, add the sweetener and vanillin if you like, then pulse it to reduce everything to a cream.

At this point, transfer the mixture into a bowl and add the grated coconut.

Work everything with the prongs of a fork to uniform, then set aside for a moment.

Break the eggs into a bowl separating the yolks and whites, you will only need the whites. Whip them until stiff with an electric whisk and gently incorporate them into the coconut preparation.

Do it in several stages with slow movements from bottom to top so as not to compromise their soft consistency.

When everything appears well tied, take a small walnut with your hands and shape it to obtain a sphere, then crush it to make a disk and place it on the plate. Continue in this way until all the ingredients are finished and arrange your biscuits well spaced from each other.

Bake for about 35 minutes, remove from the oven and leave to cool before biting into or serving.

We put in a preheated oven and bake for 35 minutes at a temperature of 150 degrees.
