These baskets of courgettes with vegetables and cheeses, delicious!

If you intend to organize an aperitif or a dinner with old friends, prepare these baskets of courgettes with vegetables and cheeses. Delicious and gooey, they don’t contain flour or milk, but lots of vegetables, bound together by eggs, feta and Parmesan.

They are a marvel: cheerful and colourful, very light and dietary, they will satisfy even the most refined palates. They are made in a flash, with the help of muffin cups and cooked in two stages. A first batch to make the base, a second to cook the filling, first sautéed in the pan to speed up the cooking time!

In less than half an hour you can churn out a small masterpiece of gastronomy.

Zucchini baskets with vegetables and cheeses: ingredients and preparation

For this recipe, get:

  • 2 zucchini,
  • 1/2 onion,
  • 1/2 yellow pepper,
  • 1/2 red pepper,
  • black pepper, to taste
  • sale, q.b.
  • egg, 2
  • extra virgin olive oil, to taste
  • more, 50/70 g
  • parmesan cheese, 60 g

Preheat the oven to 180°.

Wash and peel the courgettes, then grate them into julienne strips. Place them in a fine-mesh strainer, add a pinch of salt and stir to distribute, then leave to rest for a quarter of an hour.

Meanwhile peel and finely slice the onion, also cut the peppers into cubes. She put the vegetables in a pan.

Take the courgettes, squeeze them well to free them from the liquid, and transfer them to a bowl. Add the pepper and an egg, adjust the salt and mix carefully to obtain a uniform mixture.

Now grease the muffin cups and fill the bottom of each with a layer of zucchini mixture to cover the base and edges, making a basket with a void in the center.

Bake for 15 minutes.

In the meantime, drizzle the oil into the pan with the peppers and onion and cook them to soften them, then transfer them to a bowl. Slice the feta cheese into cubes and add it to the vegetables, add a whole egg and mix with a spoon to mix.

Take the courgette baskets out of the oven and put a generous spoonful of this filling in the centre, then sprinkle with the Parmesan cheese.

Bake again for 10 minutes, then remove from the oven and serve.
