Ingredients

  • 1 broccoli
  • 1 cauliflower
  • 1 red pepper cut into strips
  • 1 yellow pepper cut into strips
  • 1 chopped onion
  • 200ml of milk
  • 150 g of grated cheese (such as Galbanino light)
  • 150 g of plain yogurt
  • 130 g of flour
  • 125 g of light mozzarella
  • 3 tablespoons of olive oil
  • 3 eggs
  • 3 tomatoes cut into pieces
  • 2 cloves of grated garlic
  • Just enough oregano
  • Just enough salt

What you need for the sauce

  • 50 g of plain yoghurt
  • 30 g of light mayonnaise
  • 1 clove of garlic
  • Just enough chopped dill

Preparation

  1. First, separate the broccoli florets from the stem, cut them into smaller pieces and do the same thing with the cauliflower.
  2. Now put the vegetables in a pot with plenty of boiling water, add 2 teaspoons of salt, mix them and bring them to the boil for 2-3 minutes .
  3. Drain the broccoli and cauliflower with a slotted spoon in a bowl and temporarily keep them aside, so that they cool down properly.
  4. Now pour a drizzle of oil into a non-stick pan, add the chopped onion, brown it, add the grated garlic cloves, mix, brown, add the red pepper and yellow pepper cut into strips, stir, close with a lid and let go on low heat for 10 minutes (amalgamate occasionally) .
  5. Transfer the chopped tomatoes into a container with high edges, mix them with an immersion blender, pour the sauce into the pan of peppers, mix, flavor with the oregano and salt and cook for a few more minutes.
  6. Once this is done, grease a rectangular glass baking dish, spread the broccoli and cauliflower on it, then season with the mozzarella cut into small pieces and the pepper sauce.
  7. Break the eggs into a bowl, add salt, beat with a hand whisk, add 3 tablespoons of olive oil, stir, add the yoghurt, mix, add the flour a little at a time and start working again to obtain a creamy mixture . pour the milk and stir again.
  8. At this point, use the batter obtained to cover the vegetables, sprinkle with chopped parsley and grated cheese, then cook in a preheated oven for 30 minutes at a temperature of 180°C .
  9. Finally put the yoghurt, mayonnaise, chopped dill and minced garlic clove in a small bowl, mix to obtain a sauce and serve it to the table to accompany the flan.
