The fake carbonara without eggs, a tasty and light first course with only 340 calories!

Very probably few have heard of the  fake carbonara , which is a very appetizing variant of the famous pasta originating in Rome, which we all appreciate.

This recipe was proposed during an episode of Cuochi e Fiamme by the competitor Gaia, who presented a delicious dish made with raw ham, turmeric (which in this case was substituted for the egg) and ricotta. But now let’s see the recipe!

The fake carbonara, the delicious alternative without eggs to eat for lunch

Ingredients

  • 75 g of diced raw ham
  • 150 g of ricotta
  • 160 g of spaghetti
  • 3 generous spoonfuls of pecorino romano
  • turmeric qb
  • Salt and Pepper To Taste

Preparation

  1. To start, boil water for the spaghetti, while toast the raw ham in a separate pan without adding any type of fat (oil and/or butter).
  2. Once this is done, take a bowl, or alternatively a bowl is also fine, inside which you will have to mix the ricotta together with pecorino romano and turmeric, this ingredient must be dosed a little by eye as you need the right amount to be able to obtain the yellow color given by the egg.
  3. Also, be careful not to add salt because pecorino is a very salty cheese on its own, instead for pepper it’s up to taste.
  4. Once your spaghetti is ready, i.e. al dente, you season it together with the mixture, then add the raw ham and, if necessary, add a few spoonfuls of cooking water. However, try to dose well, because if you put too much you risk watering everything down, even if fortunately you can make a correct one by grating more pecorino.
